Large jars of mayonnaise were on sale and cost substantially less than small jars of mayonnaise. So... what on earth am I gonna do with all this mayonnaise? I only wanted a little bit.

This is a dip I think you'd enjoy, that's made with quite a bit of mayonnaise. It tends to get rave reviews at my parents' parties, and I myself was very fond of it until my dislike for fish solidified past the point where I could overcome the dissonance of liking it :-)

In fact, I think there are quite a lot of kinds of dip (spinach and artichoke, things involving cheese and tomatoes) that involve mayo, so you kind of have your pick on that front.

Condiments in general have this problem. Luckiyl condiments last a loooong time.
I have a jar of (well, vegan) mayo in my fridge that's years old and it hasn't gotten me sick yet. I don't know if I'd recommend "years" to others but it's not terribly urgent.

I'm partial to wasabi mayonnaise on cooked fish or with cold cooked asparagus.

Combine mayo, soy sauce, and small amounts of sugar, lemon juice, and wasabi powder. I'll go look up the relative amounts tomorrow.
